I have a question about 8bit,
how would u make it render 8bit or is it just simply the textures you use ?

You could make sure all textures and material colour values belong to the 8 bit palette you wish to use. Keep in mind, using lights would create colour gradients.
I had a look at render surfaces and the lowest texture format you can get is 16bit RGB or 16 bit ARGB (effectively 12 bit RGB). So that won't work for you. However, I believe that you could write a shader that converts each pixel to the closet available colour you have set in your palette.
